I had ignored my new KitchenAid for far too long. It sat on my kitchen counter, looking at me desperately each time I passed by. Many times I was tempted to hold it close and tell it not to take my neglect personally. Many of you probably just stopped reading.
Yesterday, as I passed by the gorgeous red thing on my way out the door I decided I wasn’t going to let it sit on the counter empty any more. BY-JOE! I was going to bake SOMETHING!
But what?
Valentines Day had come and gone and so had my cravings for chocolate. I wanted something light. Something that wouldn’t leave me regretting that I ate it later. Something delightfully simple as well….
Ladies and gentlemen… drumroll please….
I introduce to you, Lemon Pudding Cake.
It’s moist, delicate, and smooth texture is juuuuust perfect! This dessert is both a light and fluffy cake on top and a warm lemony pudding on the bottom. Not only that, but I made homemade whipped cream to dollop on these as well. The flavors were incredible. Or maybe I was just really hungry… 🙂 Regardless, both recipes are below. You can top these cakes with almost anything…. whipped cream, berries, or powdered sugar are a few toppings that I like. Try them and feel free to let me know how they turn out!!
