I adore Summer! The sunshine, the beach, the spray of the ocean, fun memories shared and random adventures that are waiting to be taken…. ahhh! It gets me excited just thinking about it! Summer officially started for me last week and the very first thing I did, was get into my car and drive to Nashville, Tennessee to visit some sweet friends! Among the many things we did, we somehow found time to make these yummy summer treats! Seriously, I was so surprised the Nutella recipe was as easy as it was and that the watermelon recipe was as yummy as it was! They’re so fun, I just had to share 🙂 ENJOY!
WATERMELON POPSICLES
Prep: 5 Minutes Freeze Time: 4 + hours
INGREDIENTS:
- 3 ½ Cups cubed watermelon, seedless
- 5 Tbsp granulated sugar, divided
- 1 Tbsp fresh lemon juice
- 1/2 cup canned coconut milk, well shaken
- 6 medium kiwi
DIRECTIONS:
- Add watermelon, 1 ½ Tbsp granulated sugar and lemon juice to a blender and blend until well pureed. Skim off foam then carefully pour into popsicles molds filling each about 2/3 full.
- Cover with cling wrap and insert popsicles sticks through the cling wrap so they stand up semi straight. Freeze 3 hours.
- During last 30 minutes of the watermelon freezing, whisk together coconut milk with 2 Tbsp sugar until sugar has dissolved. Pour atop the frozen watermelon layer, onto each popsicle, evenly.
- Return to freezer, uncovered, and chill 30 minutes or so.
- Meanwhile, cut tops from kiwi and use a spoon to scoop out the fruit. Blend kiwi with 2 Tbsp granulated sugar until well pureed.
- If you don’t want the seeds, spoon kiwi mixture through a fine mesh strainer into a bowl using a rubber spatula (I kept them for an extra pop!)
- Chill kiwi mixture 30 minutes.
- Remove popsicles from freezer and carefully pour about 1 Tbsp kiwi mixture over coconut layer.
- Return to freezer and chill until popsicles are solid about 2 – 3 hours.
- When it’s time to enjoy your sweet treats, run the popsicle molds under warm water for a few seconds and slowly wiggle free.

NUTELLA POPSICLES FUDGESICLES
Prep: 5 Minutes Freeze Time: 4 + hours
INGREDIENTS:
- 2 Cups cool whip
- 6 Tbsp Nutella
- 1 Cup milk
DIRECTIONS:
- Combine all ingredients in a medium sized bowl and pour evenly into popsicle molds.
- Insert popsicle sticks and cover. Freeze for 6+ hours.
- When it’s time to enjoy your sweet treats, run the popsicle molds under warm water for a few seconds and slowly wiggle free.
